Mini shortbread pastries stuffed with dates!

These scrumptious pastries also known as Ma'amoul, can also be stuffed with pistachios, walnuts + figs. Traditionally made around Eid time, they're gorgeous with a dash of icing sugar.

Enjoy the photos!

semolina shortbread dough, before flattening it out, rolling them into balls determines its size and is easier to handle

yum! dates to be stuffed into the dough and rolled into a ball together

flat butter knives are good to fix the edges into a decent circle

semolina based shortbreads are amazing for browning and give the perfect shade of gold when baked! (those crums are NOT to be dismissed!)

soft + melted on the inside, slight crunch on the outside

OXO - definitely have  tools you want to hold on to, fabulously malleable, perfect for transferring delicate pastries
